My last homebrew turned out terrific, I brewed my favorite style (IPA) and was very impressed. There was something about it though where 1 was enough to satisfy my craving for it. Beers like heady topper go down so easily and always keep me wanting crack open another can.

What is it about these beers that make them so easy to drink and how can I carry these processes into homebrewing?

That's a loaded question right there.

To really recommend improvements, we would need to at least know what your process is now.

Based solely on the information you shared, here's just a guess... perhaps your final gravity (body) and/or ABV is higher than beers like Heady, and thus less "drinkable."

I find higher attenuation with good fermentation practices leads to more drinkability. Higher alcohol can obviously counteract this at a certain point.

I agree with Vikeman that lighter body/low FG contributes to increased drinkability, but I think it may also be partly environmental/social. Its a safe bet that we all enjoy drinking beer. I think, at least I hope, we have all been in the situation where the beer goes down water. It's just so great and drinkable, your thirst is insatiable. For me at least, the majority of these times happen out with friends, on the party barge, or just hanging out around the house with friends/family, regardless of beer origination. I have had times where I am sitting at home drinking where my thirst couldn't be satisfied, but it is much less often.
