Drinking your cellar.

    This is the right question to ask someone if the purpose of their stored beer is to have a strategic beer reserve, but the wrong question entirely if the purpose of their stored beer is to age the beer (and it's important to remember that everyone's palate differs... a beer ruined by oxidation to one drinker might be sublime to another. This is why it's so important to make cellaring decisions based on your own taste rather than group consensus about what ages well).

    Off the top of my head, try JW Lees or Cuvee van de Keizer Blauw at 6-10 years out. "Pure novility" will quickly change to pure enjoyment. I won't even start on lambics...

    Is that a sour? and I don't like lambics. too me a sour is just the same as an infected batch. I do know that alot of people on here do like sours though so maybe i'm missing something

    No. One of them is a British strong ale (JW), another a Belgian (Cuvee Van de Keizer Blauw).

    I'll tell you what you're missing, an open mind.

    How many beers at that age have you had?

    lol sorry if I insulted you man but there is no need to go after me. I'm just saying myself and most people I know that are into craft beers do not liked the oxidized taste of a beer over 5 years of age...

    Have a bottle of 2008 Cuvee Van de Kaizer blue. Amazing stuff. Aging a '12.

    All I have to add is I don't cellar anything. I drink everything within a week of purchase. I really just don't have the willpower to look at all these enticing bottles day after day and resist opening them all and having the time of my life

    I love drinking my cellar. The only beers I'd intentionally age are: Lambics, Expedition STOUT, BCBS, founder Imp Stout, and English barelywines. My will power doesn't usually allow me to age those very long though.
