Dry Hop This AIPA

    As some may have seen from other post, I've been working on a recipe. Likely going to give making two brew days from now. Fall '14 I'll do the true harvest version, cascade being fresh.

    Here's what I've thinking for DH, all for 5 days:
    1 oz Amarillo
    1 oz Citra
    1 oz Simcoe

    I want this to have a clean, floral, and citrus flavor.

    2.5 oz Amarillo, 0.5-1 oz Citra.

    The recent simcoe I've used (2012 crop, used about 6 months ago) was fairly catty, so thats why I nixed it. The bulk as amarillo will give you the grapefruit, peach, floral aspects, with citra for some tropical fruit notes.

    If you want “floral, and citrus flavor” then you want to nix Simcoe (which tastes piney to me).

    I personally would suggest 2 ounces of Amarillo and Citra (maybe 1.5 ounce Amarillo and 0.5 ounce Citra). What barfdiggs mentioned could be ‘good’ as well but 3 ounces for dry hopping is too much for me, YMMV.

    My most successful IPA (flavor and aroma) was a Pliny the Elder clone. It called for double dry-hopping over a 14 day period with some specific temp requirements. You read that correctly . . . 14 days. Hey, you want something spectacular you have to break a few rules. Here's the link where Vinnie describes the process:

    As for hop selection, I agree with barfdiggs. While Simcoe is delightful (my 2012 was good), it may not meet your criteria. Amarillo and Citra would be my choice and it's hard to say no to Cascade.
