We are working off a Heady Topper clone recipe that called for dry hopping for 4 days with an ounce each of Simcoe, Columbus and Amarillo. Then after 4 days, removing hops and adding another ounce (3 oz total) of the same 3 hops (so 6 ounces total). My LHBS said that is an obscene amount and is just a waste and told us to just use 1/2 oz of 2 different hops (Pacific Jade & Simcoe as we had to substitute recipe due to availability). This is only my 2nd homebrew so a little lost here but it just doesn't seem like enough dry hopping to me. Is the 6oz too much? Is the 1 oz not enough? Any help is much appreciated.

My first DIPA had eight ounces of dry hops, and totally kicks ass. Could it have used less hops? Probably. Do I have any regrets? NO. The aroma is wonderful. Hops are cheep (at least if you buy them in bulk). And you only live once.

Most beers I use 2-3 ounces total tho. It's usually enough.

This is correct. And it's why your avatar played an SG.

Big brewers use up tp 3lbs per per barrel for dry hoppimh some really hoppy beers. 3lbs is what 48 oz spread over 31 gallons or so. that's approx. rate of 1.5 oz per gallon so it your making 5-6 gallon batch using 8-9 oz may be a bit heavy but not outlandish.

I think your LHBS is full of crap, frankly. I dry hop with 4oz in my IPA and 2oz in my APA and am very happy with the results. If you want huge hop aroma (like Heady Topper) you're going to need to use lots of hops.

There could be a difference in hop aroma production and amounts needed for large brewery sized batches and equipment, and homebrew sized batches. Whether that is true or not, there is little doubt that 2 oz for "standard" APA type beers, 4 oz for IPAs, and "more than that" for IIPA type beers is perfectly reasonable for 5 gallon homebrew batch sizes, and will result in tasty and aromatic beers.

Appreciate the help guys. Sounds like I want to do 3-4oz at minimum in my dry hop. If i used Columbus, Pacific Jade and Simcoe in my boil, would i do 1-2 oz of each of those in my dry hop?

You don't have to. Do whichever ones you want. More berries and dank, Columbus. More pine, higher Simcoe. You can dry hop w/ all one vareity, 2, or all 3, and you can do different amounts of them, all depends on what you want. If you want Heady Topper, I would go w/ the recipe.

I'm in final prep of brewing a DIPA clone with Nugget as a base and Citra and amarillo as aroma and dry hop. Over the course of the dry hop plan to use about 3 of citra and 2 oz of Amarillo.
Like Mr. Capone said "hop away you only live once. just get the hops of the beer before some off flavors develop at a minimum you will have an amazingly aromatic beer.
