I have two packs of US-05, produced June 2010 and kept in the fridge. Are these good to go, or should I pick up some more? Thanks!

Been using US-05 for awhile and have never seen a manufacture date...only a best by date. With a 6/2010 date I think I would just use them both for (1) normal gravity 5gal brew session.

rehydrate the yeast in sanitized plastic(PET) bottle, after 30 minute shake it well. if bubble or foam start to show up you reedy to go

Normally, I wouldn't recommend it with a dry yeast, but this is not a normal situation - it's likely 2+ years past its 'best by' date. I'd suggest making a starter with it just to be sure you have enough good stuff.
