Dumb move

    Okay, so I brewed a basic beer recipe yet when I pitched my yeast I realized I dumped in my homemade sauerkraut juice which is basically a natural lacto/Brett mix naturally from my basement. I ferment my kraut the old fashioned way. What should/can I do? Let it go and see what happens??

    nice move.. Pitch the yeast if you didn't and let it ride.. What style was it?

    Could turn out nicely... so play along.

    I'm not sure what your choices would be besides let it ride or dump it. Like FATC1TY said, pitch your normal yeast if you didn't already.

    Should turn into something nice if it is just a bunch of brett/lacto. Wait 2 mos and enjoy.

    Welcome to the world if wild fermentation my friend. Depending on your base style, the lacto could just add a slight tang, do nothing, or give you a nice sour. The Brett will probably take hold at some point.

    What if you just accidentally made the best beer you've ever had?? At worst it turns out to be disgusting and you eat the cost of the ingredients and learn from your mishap.

    Provided it isn't anything too bitter or roasty, I'd let it ride until the wheels fall off (pellicle drops).

    If you haven't pitched your yeast you can reboil, rechill, and pitch your yeast. Otherwise, see above and hope for amazing beer.
