    .5Lb - Honey Malt
    .5Lb - Chocolate Wheat

    1 oz Hallertau (4%) 60 min

What do you guys think? I can mess with the ratio a bit if need be, but does this sound like it should be (or close to) a good Dunkel?

I would substitute the 5 lb American Red Wheat for 5 lb Weyermann wheat malt, or another German wheat malt, if you can. I typically only use about 0.5-1 lb of Dark Munich in my D-weizens, but I also have around 4 lb German 2-row pils malt in my grain bill as well. Those are just my suggestions though, I think either way you'll have a good dunkelweizen in the end!
