    Rack the Flanders, let the lambic sit. If it sits, will get funkier from autolysis and metabolism of lysed yeast cells by bugs/brett. Flanders tend to be pretty much clean sourness (lactic and acetic) and some cherry pie from brett. Lambics tend to have lots more funk and weirdness.

    Sorry you guys missed out but ECY seems to be stepping up production so just like/follow/whateveriscoolnowadays love2brew and they'll say when they get more stock in (usually every few weeks or so). I get notifications whenever they post to stay on top of things because as you know, shit goes quicker than someone who drank tap water in SE Asia. Cheers!
