When I got a used pot + ball valve, it had this elbow on the inside. It was pointing down, and barley had any clearance from the bottom of the pot. Why?

Down close to the bottom keeps the siphon going longer so you get more out of your pot.

I see. So if I maintained a whirlpool and drained it slowly, I should get a smaller amount of material leaving the pot, and more wort?

that is a three piece valve. looks like stainless.
pretty much the cats ass because you can disassemble the works for cleaning and maintenance. not cheap either.

i know that is not what you were asking about, but you should know (if you didn't already) that you have bad ass plumbing on your rig.
    Cheers.
