English IPA

    I have 4 ounces each of whole cone EKG and Fuggles to use... Time for an English IPA.

    1 oz whole cone Fuggles 15 minutes
    1 oz whole cone EKG hop back for 15 minutes
    1 oz whole cone Fuggles hopback for 15 minutes
    1 oz whole cone EKG dry hop
    1 oz whole cone Fuggles dry hop

    [Yeast] TBD - Probably Wyeast 1098

    [Water] TBD

    [Process]
    Boil Time 60 minutes
    Mash Temp 152

    I'm not sure of your target beer, but the ones I make are just Maris Otter in the grist. OG and IBUs look good, as does the yeast selection.

    I would underpitch slightly to get more esters, try 1/2 to 2/3 of the rate that mrmalty or other calculators suggest.

    Water that I build is high in sulfates. Look up a pale ale profile on the web. 300-350 ppm is something I like for this style of beer.

    If you are patient, try Brett C in part of a batch, it will make it bone dry without much funk. Had a sample of one night before last, and yes it is going dry.

    Yeah, you definitely want an English base malt (Maris otter or golden promise). A little amber malt is nice too. Your yeast and hops look pretty good. Another yeast I like is WLP023

    Thanks for the thoughts and opinions. I'm going to switch the malt to Maris Otter or Golden Promise and cut a .25 pound from the torrified wheat and caramel malt. I want a little malt complexity and body in this beer.

    The water profile will be either Burton or the Bru n Water Pale Ale profile...I need to play with the numbers.

    I'll keep WLP023 in mind when I go to the store. It all depends on what they have in stock. Brett? Maybe another time. I need something sooner rather then later. Next time I'll make an English Brett IPA .

    My preferred yeast for brewing my English Bitter Ales is Wyeast 1469 (the Timothy Taylor yeast strain). I have never brewed an English IPA but maybe this yeast would be well suited for this style of beer?

    Just to be clear, mine use WY-1028. The Brett was introduced in the secondary along with oak honeycombs (1 day, I can always Oak more). The Brett will work slow, but the historic IPA were in the brewery yard for up to a year before the 6 month transportation by ship.
