Enough Diastatic Power for Conversion?

    Are you against throwing a pound of 6 row in there for some reason?

    Not entirely against it. But I already have all of my ingredients and don't have any 6 row on hand. Plus I didn't know how much 6 row I'd need to add to make a big difference.

    You could build or download a spreadsheet that does the calculation.

    This is exactly why I suggested adding some wheat malt, although re-reading my post I did not make that very clear.

    Wheat has one of the highest DP numbers out there. I have seen anything from 160 Linter to over 200 Linter. A little bit of wheat malt will go a long way toward helping this mash convert.

    Yep. Wheat malt is an excellent choice for adding some DP. My oat malt idea was addressing part of the issue (the conversion of oats). I don't know that it has so much DP as to be valuable at converting other grains (such as the flaked barley in the OPs recipe), buy it does convert itself, which gives it an advantage over using flaked oats. You know, it would be awesome if they marketed a malted version of barley that we could substitute for his flaked barley...

    I see you there. :slight_smile: I don't know much about the DP of wheat malt. I'd hope it's up there with 2 row?

    I think I need my brain adjusted. I was looking up DP values and it seems wheat is not much better than 2-row for contributing DP to the mash.

    If it makes you feel better, I need my brain adjusted (or cleaned) too since every time you write DP my inner monologue substitutes "Double Penetration" while reading it....

    I'm just lucky that DVDA isn't a brewing acronym...
