ESB- need quick turn-around

    I need to brew an ESB which will be gravity poured from a cask and it needs to be ready in 6 weeks. Since the beer has a short-fuse, I kept the OG @ the lower end of ESBs. Anyone see anything that could present a problem or should be tweaked?

    7.00 lb Pale Malt, Maris Otter (3.0 SRM) Grain 79.10 %
    0.75 lb Caramel/Crystal Malt - 60L (60.0 SRM) Grain 8.47 %
    0.40 lb Barley, Flaked (1.7 SRM) Grain 4.52 %

    1.80 oz Goldings, East Kent [5.00 %] (60 min) Hops 29.9 IBU

    Ah poured from cask and you have 6 weeks. No problem dude.

    “ …will be gravity poured from a cask and it needs to be ready in 6 weeks.” You should have absolutely no difficulty meeting that timeframe. I make a 1.050 Bitter Ale that is in good drinking condition at the end of week 5 and I dry hop for two weeks and bottle condition.

    I think you meant to put the FG at 1.010 vs the measured OG hehe.

    This recipe will be fine in 6 weeks. I have turned them around in 2 weeks or less. I like a little pilsener malt in my ESB's, maybe about 25% of the base malt. Really like the flavor it gives when you mix up the base malt bill a little.

    Also, boil the fuck out of it. I boil my ESB's for 120 minutes and boil hard. It's all about the Maillard reactions with these beers.

    6 weeks is plenty of time, especially considering you are pouring from a cask. Looks like a great recipe to me, I would drink it!

    So, if I were to scale up the recipe so that the OG is @ 1.065... no problem with the timing?

    None that I can see, but at that point arent you moving closer to an English IPA rather than an ESB? Not sure if that is an issue.

    Oh, and to make this relevant so it doesn't get deleted: I homebrew and that looks like a solid recipe.
