ESB Recipe Help

    I wanted to brew up a "traditional" ESB for my friend's 50th birthday. He's a Brit who likes his ale on the malty side and does not favor aggressively hop-forward beers. So this is what I've come up with - pretty simple, actually, and I wanted to get some opinions and/ or suggestions on the recipe. I'm looking for something that's not overpowering in terms of bitterness with a good malt backbone and some fruitiness from the yeast.

    87.5% Maris Otter
    12.5% Crystal 60

    0.25 oz Warrior @ 60 min (22.5 IBU)
    0.5 oz EKG @ 30 min (11.5 IBU)
    0.5 oz EKG @ 10 min (5.4 IBU)

    White Labs WLP013 (London Ale)
    Ferment @ 65 F

    Mash @ 152 for 90 min

    Estimated OG:1.051
    Estimated FG: 1.014
    est ABV 4.9%
    estimated color 10.6 SRM

    Personally I would recommend:

    1) Use British crystal, not US made crystal, it will be richer and more authentic.
    2) 5% crystal would be more typical, 12.5% is not unreasonable but it's more than you'd typically see used.
    3) Typically you'd see more hops, even in a beer that you want to be malt forward.

    I like your choice of yeast, it's my favorite.

    Of course, these suggestions are based on my own personal tastes and what you usually see in ESB recipes, YMMV based on what you want your particular beer to taste like.

    I'd Throw some victory malt in there.
    Too much crystal.
    Move the 30 min EKG to 20 min.

    Very important, make sure you carb at about 1.8 units CO2. Not only is that true to style, but the lower the carb the less you can taste the hops, so you want it low.

    As was posted above I would suggest less crystal malt. My preferred crystal malt for English Ales is Simpson Medium Crystal.

    My preferred yeasts are Danstar Windsor and Wyeast 1469 (West Yorkshire Ale).

    I use a total of 4 ounces of EKG for flavor/aroma/dry hopping but I prefer my English Ales to have a ‘presence’ of EKG.

    I would enjoy Jack's beer. Those are my favorite dry and liquid strains for English styles. The suggestion of using less of an English crystal resonates too. Simpson's medium is a favorite of mine. I've used a challenger/EKG mix for many English ales. My most recent was100% Whitbread goldings and I loved that too.

    The above recipe is an older one of mine, and needs to be scaled down to take into account my increased efficiency. But you get the picture.

    My 2c. Use more hops but use willamette or fuggles. 3 oz in the last 10 minutes ---> flameout would be divine. They will not overpower. Less crystal but I like the choice of 60. Use English malts.

    Also... consider, but then choose, and do. If your fundamentals are solid, beer is very forgiving for any reasonable recipe. Opinions on recipes are similar to certain body parts in that everybody's got one. :rolling_eyes:

    Haha.... I have some on hand, thought I'd use it for a bittering charge instead of letting i go to waste. It's relatively clean and neutralso I can save the EKG for flavor and aroma.

    I really appreciate the input! I've swapped out the US crystal for Simpsons medium crystal and backed off on the amount, now down to about 6%. I also really appreciate the input regarding carbing! He has told me he likes a lighter carbonation (compared to US standards), and I was looking at about 2 volumes. My hop schedule looks similar to JohnSnowNW's - I will think about the Fuggles... This should be a good start!

    I got one too! LOL...

    I like the idea of Willamette - one of my favorites. My biggest issue with hops is that I always err on the side of caution and under-do my late additions, and vow to do better the next time. I think I need to be brave here... As long as it doesn't get too hop-forward, he'll like it.

    BTW as part of his gift, I've invited him to join me on all aspects of the brewing process and teach him how to brew. Should be a blast!

    I have some Fuggle rhizomes coming tomorrow...maybe throw some Lyle's invert in there to make him feel at home :slight_smile:...and leave out the priming sugar to really give him some wood.

    Well the rule with willamette is that whatever you think you need, double it, then add two more ounces at flameout.

    I made a smash with 2.5 oz willamette and it was all malt (but was tasty, just very maris ottery and not at all hoppy, even tho the IBUs were adjusted via the 60 min addition). I also just recently made a petite saison smash with 6 oz willamette (15 to FO) and T-58 and it's hardly anything you could call overly hoppy.

    I can’t specifically comment to Fuggles hops but EKG is a mild hop (compared to American aroma hops). Using a total of 2 ounces for late hopping (20 minutes and end of boil) is not a lot of hopping.

    Question: my LHBS doesn't carry Simpsons... but the do have Munton's 60 L crystal. Does anyone feel this is not an adequate swap for the Simpson's medium crystal??

    It should be close enough! I have never had any problem with anything Munton's.

    I CAN comment on fuggles:

    mmm. fuggles good. me like fuggles. :sunglasses:

    Don't skimp tho. They're not strong, so if you want to taste the hops, be generous.

    Update:
    We brewed the beer last Saturday evening, fermentation was in full swing Sunday morning. Active fermentation ended late Tuesday. Friday evening I took a hydrometer sample and it finished out at 1.010. Wow!! It tastes really good! The finish is dry and seems pretty well balanced, just a tad on the bitter side. I think once it's carbed and conditioned it's gonna be a real winner. Thanks everyone for the advice!

    I mashed at 152 for 75 min - next time I might go a little higher @ 154. Final recipe:
    3.5 gallon batch

    OG 1.058
    FG 1.010
    6.1 % ABV

    93% Munton's Maris Otter
    7% Munton's 60L Crystal

    0.5 oz UK EKG (7.2% AA) @60
    0.75 oz UK EKG @20
    0.75 oz UK EKG @ FO

    Going to bottle this weekend!
