    You haven't been to Jester King, have you? They're all neutralized barrels, unless otherwise noted.
    I would imagine malty Noble King, or something similar.
    I'm not sure what beer you've been sipping on...
    It seems someone is on the same page as me.

    Okay that makes sense about the barrels. And it would so easy to make a beer like King Henry! (Obvious sarcasm)

    I'm pretty sure Commercial Suicide, Wytchmaker, Black Metal, Noble King, Mad Meg, Le Petite Prince, Thrash Metal, Beer Geek Rodeo, Weasel Rodeo, etc. are not barrel aged. Boxer's, Wunderkind, Whiskey Rodeo, some Commercial Suicide variants, and Bonnie are barrel aged.

    Also meant to note: M is a Belgian Barleywine hybrid, which happens to be one of the most sort after beers, or am I wrong?

    I was told first hand that they use neutralized barrels for their beers, so unless otherwise told first hand again, I can only assume that's how they ferment their beers. Perhaps I'm wrong, though, but they do have a lot of beer sitting in barrels.

    They ferment in metal tanks then in barrels, if it's barrel aged. Per Jeff on the brewery tour.

    So, they're artisan beers through yeast only?

    the Funk Metal at Flying Saucer today was every bit as good as I thought it would be. A sour imperial stout...nicely done.

    IIRC: their sours are fermented with saison yeast in the metal tanks then placed in barrels secondary fermentation with wild yeast/brett/etc.

    Their regular lineup isn't barrel-aged however.

    Maybe my info is out-dated and they changed methods, but I thought they barreled everything for "artisan" reasons? Either way, I'll stay hard headed! :angry:

    Belgian barleywine wouldn't be good to me either. The farmhouse yeast has made most of the beers go in one direction. Until that is fixed, I feel a rut has been reached.

    Rut=Das, Boxer's, Rodeo trilogy, Buddha, Gotlandstika or whatever it's name is, Bonnie, Funk...does not compute with me.

    If JK is on a rut then no brewery in the world wants to be outside that rut.

    I feel when every beer you make is a farmhouse that shares a flavor with every other beer then yes, it's a rut.

    The experimentation is cool, no doubt, but when even your top notch RIS starts tasting like a Saison, I feel there is an issue.

    I was just coming over here to post about Funk Metal. A fine Texas BA sent me a bottle and I just opened it up while watching the giants/eagles game. What a terrific beer this is. I love the lactic sour nose and taste but you also get a nice roasty imp stout too. Very well balanced and very enjoyable beer. Appearance and mouthfeel are great too.
