    Does anybody know if they actually use Lactobacillus?
    The description on their website mentions they use acidulated malt, but makes no mention of lacto.?

    Based on description, this is just a soured mash, then fermented with ale yeast.
    so, lactic acid.

    Acidulated malt and sour mash are two very different things. If they added just acidulated malt, it is not a sour mash.

    correct, acidulated malt can also be used to adjust mash pH in any mash. But the description of the beer suggests that acidulated malt was used with the intention of lowering mash pH below the normal conversion range. If i'm mistaken correct me, but isn't this a sour mash...?

    A sour mash is the usage of local microorganisms to sour. Adding just acidulated is not considered a "sour mash".

    mnbrewery is right. Acidulated malt is usually used to adjust ph to improve mash and fermentation. I'm not positive on how it's produced, but it is not the same as adding straight lactic acid or employing a sour mash. Also not the same as pitching lactobacillus. From my experience, the best lactic acid character comes from pitching lactobacillus or a sour mash. Using enough acidulated malt to make the beer tart enough for a proper gose effects fermentation negatively, and using lactic acid provides a more single-note acidity.

    my apologies, thanks for the insight on terminology. sounds like their beer description probably isn't all revealing
