Extract session saison...problems?

    Thanks to a hurried order, I'm 2 lbs short of extract and have nothing fresh available locally. The brew was originally 5 lbs pilsner dme, 1 lb wheat dme and 8oz corn sugar and clocked in at about 4.8%. Now, I'm looking just shy of 3.75. I love the DuPont yeast and am using it here. Sugar is at 11% and I dont want to up that. If I take bittering down I around 20 ibus and ferment warm and dry to accent this yeasts best points, is this going to turn out arid and sharp, thin and overly harsh at a gravity more suited to English bitter or mild? I know I could mini mash or partial mash but w a new bay we hardly have 20 min to ourselves and I don't want to get out my AG or partial mash gear if possible.

    Why not just scale down the batch size?

    This was the obvious first solution to me as well. However, i have a brand new legging system (had it almost a year now) and never have gotten to use it. Also, with the little lady being here now, money is far, far tighter (turns out baby clothes/etc/etc are a COMPLETE racket, but hey, formula and diapers are necessary). I wouldn't mind having a full 5 around. I guess if i had to i could use my old tap a draft system w/a 4 gallon batch, but those little co2 cartridges are outrageously expensive sadly. Still...maybe

    I have twin girls so believe me when I say, I know how expensive kids can be. I don't think I had a drop of alcohol in the first 6weeks after they were born...too damn busy and too damn exhausted. If it were me and I was faced with this I'd scale down and go with the old system and wait until I had a batch I knew was worthy of the new. And in the meantime try and sleep as much as you can.

    I would just make a lower gravity Saison/Grisette. No worries. With that sugar component, it will be extra dry, but I doubt it would be bad.

    No reason you can't go for a lighter ABV. Sasions were traditionally on the lower end. Besides, with a new baby in the house, you could have a couple of the lower ABV Saisons while relaxing/during naps, and still be ready to go when baby wakes up/needs you.
