Fading Hops

    There is a lot of talk about freshness on here. Question - as a hoppy beer ages, does the bitterness die down or increase? I know aroma/flavor takes a hit...but not so sure how bitterness is affected

    bitterness fades much slower than dry hop flavor. Def noticed it in Pliny.

    Bitter will calm, more malty thick flavors will become more prevalant as it gets older.

    I always felt like the aromatics were the first thing to go, citrusy,floral, piney, whatever they may be. At the point when the aromatics have faded to me it seems the beer can have a harsh bitterness that isn't all that pleasant, then once the bitterness subsides the malty flavors will come through more. The point at which the bitterness seems harsh could be what is referred to as the awkward phase in some beers, namely barleywines?

    Yeah I noticed this while drinking a 2012 Bigfoot at about 4 months of age. The hop aromas were pretty much gone, and the bitterness seemed much more harsh and astringent even compared to fresh Bigfoot.

    Yeah, the aroma is a big factor on if I say 'uh oh' or not before I take a sip. I can't describe it but I know the smell of a past due IPA far too well.
