    Hello Dany. I know your recipes are kept "secret", but I had a question I'd hope you could answer. Is your recipe for Été relatively the same each year or are there big differences? Also, how satisfied are you with this years batch of Été?

    I'm getting some bottles and hope they are as tasty as the two previous batches I've had. Thanks!

    hello Mark, at first in the '90 years yes ans early 2000 years .. but now people want differences .. so each time 4 seasons i'll have to change .. even if the basic are same ...

    well the summer seems me ok , but without anough carbonation, but taste was good for me ..

    so .. you haver to taste and to tell us what happens.. :-)

    Fantome saison is an absolute monster of a saison. bubblegum, mushroom, funk, earth. I love it.
    i've only had 3 bottles, i think, in my lifetime. one was in Brussels at a restaurant. the staff gasped when i ordered it. i offered them a taste. they scattered. who cares? more for me.
    it was absolutely incredible. if you want a beer that pairs well with food, Fantome saison is perfect. It has rich meaty flavours and is still somehow a saison. it is Saison Dupont's bully cousin.
    Dany, i just got a bottle from Sergio. he was in toronto to visit. i will need to cook a nice dinner and have it with it. a nice risotto with some funky parmegian cheese would work well.

    Dany, I opened one of the bottles. Was a bit darker than I remembered , low carbonation, but yes the flavor was very good! I do wish it was more carbonated though. Do you think it may pick up some carbonation with time? Is there enough fermentables and yeast that can create carbonation if I age some bottles? Or do you think it will lose carbonation?

    Overall, still one of my favorite Fantome.
