If I have to limit myself to just one brewery, then I'm assuming full pick of the portfolio whenever thirsty. Toppling Goliath, very diverse lineup of hoppy beers, world class stouts.

    Grimm!

Everything from them has been a home run. Enjoy their diversity also. Great IPAs, stouts, sours, and Belgian beers of all sorts. Can't wait until they open the taproom/brewhouse. Should make their beers more accessible.

Hill Farmstead. They make such well-rounded, balanced, nuanced beers.

I wanted to say Cantillon or Drie Fonteinen, but there is not enough variety there to keep me content.

New Glarus, OEC, Trillium, Tree House, Grimm, Jester King, SARA, Toppling Goliath, Weihenstephaner, Andechs, and Funk Factory also come close.

Like a lot of you, I've got a good list of contenders. But... while I love them all, if I have to pick one... I'd say we could all stand to drink local a little more, so for me: Swamphead (Gainesville, Fl).

I came into this thread to say Firestone Walker, and see the OP and I have similar taste. I mainly drink IPAs and double IPAs, and Union Jack and Double Jack are both phenomenal. I also love barrel aged beers, and well, I think we know FW's track record on those. They even dabble in sours, and maybe I'll appreciate that too if I ever get into them. If I could only choose one brewery for the rest of my life, it would indeed be them.

Wicked Weed because I've had most of their beers, they're responsible for my craft beer obsession, and I respect the way they do releases. Medora is one of the most underrated beers out there

It'd probably have to be dogfish palo, burton, their ipas, and big beers are all among my favorites.

In general, Sierra Nevada. I buy the most cases every year from them. Local favorite, Jacks Abby.
