Favorite Hops

    Simcoe, Citra and Amarillo.

    nothing too out-of-line with what's already been listed:
    1/2 - Citra and Amarillo (these trade off for first and second regularly)
    3 - Saaz (there's something about a fresh, nicely dry-hopped Czech pilsner in the kegerator)
    4 - Simcoe for that piney slap
    5 - I'm gonna have to leave this one open, it's a revolving door depending on what i'm in the mood for or what will compliment the above-mentioned.

    Well I'm not super experienced yet, but I can tell you one thing... I love cascade hops. I bought a pound early in my brewing adventures and it basically makes everything taste like heaven if you ask me! I bought more after that, and I just bought some more too :grinning:

    Can't decide on the fifth? EKG?? Let's give it to EKG by default.

    I feel that a couple of the "hot" hops out there right now are pretty one dimensional. Citra, for one, I prefer in small amounts in lower gravity beers for summer consumption, preferably using a hefty dose of wheat in the malt bill and a clean fermenting yeast. Mark my words, in 15-20 years this will be the vast majority of what it is used for. Simcoe, wow, its great in APAs, AIPAs, IIPAs, and overpaying for clean bittering. Once you get past that, it's great as a late hop, by itself or blended in APAs, AIPAs, and IIPAs. It's the Rollie Fingers or Dennis Eckhardsly of hops, could open, but best as a closer, and no real replacement. Every package should have a mustache on it.

    For me, it's all about the old school hops: Chinook (far and away my fave), Cascade, Columbus.

    Yeah, I flirted with all those low co-ho breeds, but, at the end of the day, I want my pales and IPAs to taste like a grapefruit brushing its teeth with a pine branch -- the bitterer, the harsher, the more bracing, the better.

    A strong honorable mention goes to Tettnanger, a versatile old warhorse, surprisingly welcome in almost any style.

    My favorite hops are...
    Cascade
    EKG
    Hallertau
    Spalt
    Cluster
    I bitter almost every thing with Cluster.

    Simcoe and Chinook are my favorites in hoppy pale beers.

    Czech Saaz is a killer.

    Centennial is great, and I think has quite a "range" depending on timing and qty.

    And, who doesn't love Citra?

    “And, who doesn't love Citra?” I personally love Citra but I would guess that the folks who perceive Citra as having a cat piss flavor are not big fans?

    IPAs and Pales - Citra, Centennial, Simcoe
    German Pils - Hallertauer Mittelfruh
    Belgian Styles - Styrian Goldings (not even mentioned yet?)
    English Styles - EKG

    I think with these hops alone, I can take on the world. :wink:

    I brew mostly English and American ales, so:
    1. Amarillo
    2. Centennial (slight advantage over Cascades, considering it is a superior bittering hop)
    3. Willamette
    4. EKG
    5. Simcoe

    I get a touch of cat pee from Simcoe, and do enjoy it. Just because it sounds disgusting doesn't mean it won't work in a beer. I also love sours, barnyard and horse blanket are not negatives in my mind unless I am just simply standing in a barn..

    Yes! I'm sitting on 6lb of homegrown Cascades that are the grapefruitiest hops I've ever smelled. First IPA getting racked this week.

    In my Belgian beers (mostly saisons and pale ales):
    Styrian Goldings, Hallertau, Hersbrucker, Kent Goldings, Brewer's Gold.

    In my IPAs:
    Galaxy, Nelson Sauvin, Citra, Mosaic, Centennial.

    So in the last few minutes this thread was raised from the dead...
    I have an IPA up to brew tomorrow.
    bitter with homegrown Newport,
    boil with Mosaic, Citra and Falconer's Flight,
    and Cascade in the dryhop.
    Munich grain with some Crystal 40 for color and a dash of sweetness.

    I just finished building my wort chiller.
    Man, that was apain getting 50feet of 1/2" tube to do what I want. A couple small kinks, but in testing, I don't think it'll hurt the performance.
    I also have a second coil of tube for the next time I get ambitious.

    Mosaic, Chinook, Simcoe...together and yes, Centennial for a little candy sweetness :slight_smile:

    good bittering hop, very mild on the flavor/aroma qualities
