    As a homebrewer, I REALLY like to brew with Galaxy. But Citra, Mosaic, Equinox, Amarillo, Simcoe and Nelson are all close seconds :wink:

    As far as commercial beers, I think Citra is the best done and Simcoe is the most overdone. The other hops are great if utilized right, but I don't find too many beers or breweries that actually do that.

    For those of us not so savvy if you name a hop that's not Citra how about giving us a favorite beer or two showcasing that hop?

    Simcoe hops are succulent like no other and because they can be catty people do not like them . For me it's like you can taste the "cone." They have like a kernel of sweet something. I like 'em.

    Willamette. Don't see it too much anymore, but it was the hop that got me into IPAs.

    Lone vote for Columbus? Dank, savory, perhaps hint of oniony goodness. All the pretty boy hops can suck it:wink:

    Centennial carries the bulk of the weight in my favorite IPA. I think it lends itself to tremendously well-balanced IPAs that aren't overly malty and it blends perfectly with hops like Citra and Galaxy.

    I like the old-school C hops myself. I'm getting to be over tropical, and really enjoying piney again. I voted for the versatile classic, can't do without, Centennial.

    Last winter Straub (an old family brewery in in PA) made an IPL that featured Columbus hops as part of their Legacy Sampler, and it was every bit like you described attached to a Pilsner chassis. What a great choice of hop they used- somehow it straddled the two worlds better than in any other IPL I've had.

    Oh, now that sounds mighty interesting. I've had a hard time with IPLs as a style, either wishing they would just be regular pilsners or regular IPAs. Columbus IPL, though? Oh yes, I could be persuaded.

    I was thinking Simcoe, which has been a favorite in my homebrews for years, but I've tasted some brews recently featuring Mosiac and Galaxy which were superb. From Trillium in particular. (Obviously their beer has a lot more going on than hops.) Good thread by the way...

    Actually I had Nelson on the list, but ran out of room and figured I needed an "other" slot. Got rid of nelson because I feel its still new and rare. But I love it and if you have any recs on good nelson hopped IPAs available in Vermont I'd love to hear them

    I think Nelson is currently my favorite hop, though Citra and Galaxy are right there with it!

    Citra, mosaic, then Nelson. Citra+mosaic is magical, can't say I know of an ipa with all 3

    Since I've started brewing my own beer I have found that citra and mosaic hops really help IPAs, at least if you like fruity IPAs.
