I'm relatively new to brewing imperial stouts. I've brewed a ton of porters, scotch ales and old ales, but I'm still sort of a newb to putting together a recipe for an imperial stout. Any feedback is more than welcomed.

17 lbs of Marris Otter Pale malt
    1.5 lbs Roasted Barley
    1 lb Special B
    1 lb Chocolate Malt
    .5 lbs Carapils

4 oz Target pellets @60 min
1 oz UK Kent Goldings @30 min
1 oz UK Kent Goldings @15 min

Wyeast 1728 Scottish Ale Yeast with a starter.

Shooting for an OG of ~1.100

I was also considering adding maybe 3-5oz of baker's chocolate @15 or cacao nibs to the secondary but wasn't sure if that would be overkill on the chocolate. I know a lot of people associate RIS with the kitchen sink mindset of throwing everything you can think of into it but I want to make sure I'm not over doing it. Looking for a good chocolate profile but not too over the top. Thanks in advance.

I don't think you need the carapils myself. What did you calculate the IBUs at?

    That's a lot of Special B, IMO.

I almost always use the IBU calculator at brewersfriend.com and my IBUs come out to be 107.7

I'd up the roasted barley to 2lb, skip the carapils and reduce the Special B to 0.5lb. That's tweaking though; it looks pretty good.

If you are interested in a chocolate note you may want to consider adding 3-7% of a Brittish Brown malt. Perhaps at least partially at the expense of the carapils, there will be plenty of body/residual sugar with an OG of 100.

i'd even take that special b down to a c-120, maybe.
ditch the carapils for some flaked barley.

What is the alpha acid % on your target? With the amount of roast and dark malts you will not need your IBU's that high. I also would drop some of the Special B.
