Fermentation / Dry Hop question

    I brewed a 1 gallon all grain batch with 95% mosiac and the rest cascade. I went by the Brooklyn Brew Shop instructions saying to let it ferment 2 weeks and then bottle it and let it condition for another 2 weeks . I have been seeing some people say to let it ferment for atleast 3 . Just curious what other people recommend. Secondly I want to dry Hop it with some of the leftover cascade pellets I have. I am curious what is recommended for a 1 gallon dry hop ( time wise ) and am I safe just dumping in the pellets straight into the fermenter ... thanks

    Your beer is ready to be packaged when you have reached final gravity and fermentaton by-products (e.g., diacetyl, acetaldehyde,..) are below flavor threshold. In my homebrewery where I have healthy fermentations a moderate gravity beer (e.g., OG = 1.050) is ready to be packaged in less than one week. If you want to 'age' your beer longer (e.g., an additional 1-2 weeks) that will not harm the beer and potentially can be beneficial if there is a need for 'clean up' of fermentation byproducts.

    You get to decide since you are the head brewer of your homebrewery.

    What's the point with this 5% Cascade
    I would use equal amount and dry hop after seems to decline, normally 3 -4 days
    and when bottle 5 days later
    Drink then it carbonated

    Any recipe or set of instructions providing fermentation times is really giving you an estimate, like a recipe that says bake for 20 minutes, or until the center is cooked. The interp is to give it enough time to finish, which will probably be about 20 minutes, for muffins, or about 2 weeks for
