fermentation help ? (NB petite saison)

    am brewing the northern brewer petite saison extract - with Wyeast 3711

    it calls for 2 weeks in the primary and as of today has been in primary for 7 days. bubbling has all but ceased - any reason to be concerned ?

    Bubbling is not the best indication of active fermentation. Let it ride for at least 2 weeks, then test the gravity. If it's the same 3 days later, then primary fermentation is done.

    Personally, I'd let it go a month. No peaking. I'd rack to a bottling bucket and package immediately after that. No reason to be worried about an airlock's activity. ^^^ As said above, it's not an indication that it's done fermenting. What is an indication that it's done is a gravity reading at 1.0xx and a second read three days later with the same gravity reading of 1.0xx. You may bottle after this. :stuck_out_tongue:

    3711 ferments out really fast. When i've used that yeast it hit terminal gravity in a few days. That said, if you're not on a time crunch it won't hurt to give it another week.

    I have used 3711 a few times to make Saison beers. That strain has consistently completed primary fermentation in one week. I kept the beer in the primary for one additional week for some ‘additional’ bulk conditioning.
