Fermentation Schedule for Callie Common Steamer

    Started brewing a Callie Common Steamer the evening of 20-JUN

    Modest OG in the mid-50s
    Pitched Wyeast 2112 (aka WLP810)

    Initial fermentation temperature: 60°F
    Planned fermentation duration: 3 weeks

    How long should the initial 60°F fermentation temperature be maintained?
    When would the diacetyl rest start?

    What else?

    Used this yeast on a beer inspired by Anchor's California Lager that I recently bottled.

    Fermentation temps held between 62-64 for 3.5 weeks. Didn't do a d-rest, noticed no diacetyl at bottling. (so I wouldn't worry about a d-rest, although it certainly shouldn't hurt)

    Very happy so far, can't wait till its carbed up.

    Most people do a diacetyl rest for the last 10-15% of your expected gravity. I'm to the point that I think if you keep fermentation locked in at a cool temp for a week you can raise it slowly after that and be just fine. If you fail to get a diacetyl rest in, you can always make a small starter of fresh fermenting wort and pitch it on top. I've never done this, and wonder if you'll get some oxidation, but it sounds good in practice. I also read somewhere that you can detect if a diacetyl rest has completed by heating some of the final beer for a few minutes. Taste it side-by-side with the base beer after letting the sample cool. They should taste the same.

    It's now two weeks in the zone...fermentatiion temps steady in the very low 60s.
    Will let it free-rise to what'ev for a week...bottle...then report the outcome about two months later.

    btw sorry for being that guy but it's spelled 'Cali' not 'Callie'

    It's also spelled 'steam' beer...not 'steamer' but it ain't much of a hardee-har-har if you has to explain it...amirite?
