Fermentation Temperature for Imperial Stout

    I'm brewing an Oaked Imperial Whiskey Stout today, I'm using White Labs Irish Ale Yeast. I just bought an Electronic Temperature Controller to plug up to my new fridge for fermenting and was curious what a good temperature would be to ferment this beer. I was thinking around 62°-65° but wanted other opinions

    So should I set the temerature to about 55° since the temperature inside the fermenter gets about 10° warmer?

    The other option is to attach the temperature probe to the fermenter; some folks then wrap the probe/fermenter up with bubble wrap. If you go this route then set the temperature for 65 degrees F.

    That's not a bad idea. I just set it to 60° the probe sits right above the fermenter.

    I had irish ale get too hot and have a batch of ester ridden stout. I would suggest getting yourself a thermowell to accurately monitor your temps. I found one at my LHBS that is weldless. I drilled a hole in my bucket lid, put this thermowell in, and it works great. My next stout will not endure the same fate as my current batch.
