Fermenting a wheat

    I'm doing a 1 gal batch of wheat just to try it. I'd rather not keep opening it. What's the average time I should keep it in primary? I don't intend to secondary.

    I'd leave it at least two weeks, if not longer. Caveat: I do five gallon batches, not sure of effects of one gallon batches.

    You'll want to open it at least twice. Once to check gravity, and again 2-3 days later to see if gravity has changed. Don't rely only on the calendar. Yeast can't read it.
