FG 1.020

    It's been about a year since I've last homebrewed, but about a month ago I got the equipment out of the shed and put it to use! It's been just about a month since this batch was brewed, but it's still sitting at a high FG (1.020). I messed up my volumes and got a much higher OG than intended (1.071).

    I've been fermenting at 67* give or take in a converted chest freezer, the room temp has been colder than that so it could have been fermenting cooler. I am going to bump it a few degrees and maybe that'll help finish it up.

    I dry hopped today and hope to cold crash and bottle next Thursday. Any feedback?

    There was a little co2 in suspension, but I poured it back and forth a few times which should be enough to get rid of it right?

    How would a little carbonation effect the reading?

    Did you test vs water @ 59 '? Mine reads an extra .03 always.

    I often find that co2 in suspension while throw off the gravity. Tap/flick the sides of the hydrometer tube and let the bubbles rise up. That should help

    I did that and really shook the crap out of it in a measuring cup

    Does it taste sweet (malty), green? 1.020 is a bit high, see if you can wake the yeast with a shake and wait a couple days and test again. [​IMG] A month should be plenty of time for fermentation as long as there was enough yeast cells for the job.

    Take a sample (at least enough to get a SG reading) and put it into a plastic screw-cap bottle. Put it somewhere warmish, ~76F or so, and give it a shake every time you walk past / think about it / etc. After a couple of days, take it out and check what the SG is (and take a sip if you're game :wink:).

    This will let you know whether or not your brew has stalled, or if it really is finished (it'll also make sure the C02 has gone).

    I pitched two viles, but didn't do any math to see how many cells were needed. The beer tastes pretty rounded and clean.

    I'll give it another gentle shake for good measure.

    Did you really put a pound of rice hulls in there?

    I think it was .75 lbs. Is that too much/little? I didn't think it mattered too much as long as it didn't get stuck

    Nah doesn't matter.

    I don't know why you added them unless you've had a problem lautering in the past.

    If you messed up your volume at the start, have you verified that you have your full 5 gallons now?

    I used about 10% oatmeal, is that not enough to warrant rice hauls?

    Maybe I miswrote it. I didn't run off enough wort from the mash, so I ended up with less volume and a more concentrated wort than expected.

    You shouldn't need rice hulls in that recipe at all, so it's definitely too much. I mean, it won't really hurt anything, other than soak up some of your liquid if you didn't pre-soak them.

    But, I mean, 1lb, or even .75lbs, of rice hulls is more than I use in the mash when 70% of the grist is wheat malt.

    Maybe you mashed higher than you intended? You can add brett and forget about it for 4 months.

    Mysteriously high OG has me thinking thermometer calibration. It's something I've suffered through, and I'm sure some of the longer-time readers here are getting tired of hearing me talk about it.

    For my first few AG batches I was mashing about 10 degrees hotter than I thought because my thermometer wasn't calibrated and all the beers finished around 1.020-1.025.

    I do not believe there is anything wrong with your beer. If it tastes good drink it.
