Finally got some Nelson Sauvins...now what?

    So I was finally able to get some Nelson Sauvins (8oz), and now I'm trying to decide what I want to do with them. The best beer I have ever had that used Nelson Sauvins is Alpine Brewing Co.'s Nelson IPA. However, I haven't seen many reliable clone recipes floating around for that beer.

    Does anyone have any recommendations on what to do with these? If I use other hops, which ones blend well with the Nelsons. Here are a couple ideas I was thinking of:

    - Keep trying to find a decent Nelson IPA clone recipe
    - Take the popular 3 Floyd's Zombie Dust clone recipe, and swap Nelsons for the Citras
    - ?????
    - Profit


    Any suggestions are welcome!

    I know Alpine uses Rye in Nelson, so maybe make a Rye-IPA? Maybe not a clone per se, but something that is inspired by Nelson.

    I did an IPA with nelson that turned out great. I also did a barleywine with nelson as the aroma hop that also turned out nicely.

    I like that idea. Even if it turned out half as good as Alpine's, I would be more than pleased!

    I will keep this in mind for the winter months, when I can keep a barleywine fermenting in the low 60s. Sounds like a delicious idea.

    Barleywine with Nelson sounds amazing. Any chance you could share the recipe? I am looking to brew a Barleywine with the goal of having it ready for the Fall/Winter.

    I suggest a ~7% hoppy red/amber ipa/whatever you want to call it. I like the juiciness/white grape goes really well with that type of grain bill.

    I've liked them in IPA's both alone (used another hop to bitter) and with other hops like Amarillo. Another one that I brew that I really like them with is a big hoppy Amber Ale where they are the only flavor and aroma addition, they really go great with the little extra maltiness you get but are strong enough to play the part with ease.

    another idea is to get some sauv blanc grape juice and do something like a saison with the grape juice, nelson sauvin hops and maybe even a light handed oaking

    I have been trying to take a break from Saisons lately, but it's suggestions like these that make me re-think that!

    For now, I am leaning towards a Rye IPA. This recipe is sort of a blend between Denny's Rye IPA from Northern Brewer and a clone recipe I saw on Hopville for Nelson:

    8lbs Two Row
    2lbs Weyermann Rye
    2lbs Maris Otter
    0.75lb CaraPils
    0.375lb White Wheat Malt

    1oz Simcoe 20min
    1oz Nelson 15min
    0.5oz Simcoe 10min
    1oz Nelson 5min
    1oz Nelson 1min
    2oz Nelson - Dry Hop (in keg, possibly)
    (~63 total IBU)

    Wyeast 1450 Denny's Favorite

    I brewed the Honey Ginger ale from Papazian's book with Nelson hops and it turned out great. Dry, spicy and fruity.

    Citra + Nelson = Winning!

    Recipe looks tasty...but I would prob add a FWH addition and at least 2 more oz of dry. I do think the Nelsons are quite potent and are better served when paired with another variety. I read somewhere that Alpine also uses Southern Cross in their Nelson.

    Good call on pairing the Nelson's with the Simcoe. I get a ton of grapefruit aroma from fresh Alpine Brew. Co. Nelson, which would suggest Simcoe. Be interested to hear how your beer turns out. Good luck!

    I did something the exact same thing...started with Denny's Rye and a hopville Nelson recipe and sort of riffed off of both of them. Came up with something close to this, except I paired NS with Galaxy. Those two went beautifully together. Nelson + Citra is nice, too. It came out really well...I say go for it. 1450 is an effer to clear though, so plan on cold crashing.

    Perhaps I use these in too high of amounts but I never get juicy grape etc. I get lots of juicy citrus and major dank/herbal, almost reminiscent of columbus in terms of that quality.
