Firestone Walker Parabola 2015

    Forgot about sours. Don't really drink much of those. So how about beer with brett, like stones enjoy after? Does that need to be in my closet?

    I agree 100%. I was a little concerned when I had to start storing excess beer in my closet, but those actually seemed to age best.

    brett is still alive in there. i wouldn't store it in the fridge unless you like the taste now and don't want it to develop.

    if you have several examples of a sour or brett beer and notice that it's becoming over-carbonated, that would be a good time to keep it in the fridge - to slow/stop the bugs from fermenting any further.

    I have my cellaring fridge set to between 45 and 50 degrees. Is that too cold for sour/alive beers to develop?

    development is going to be pretty slow at those temps. i, personally, wouldn't store them that cold. but if the choice is between 45-50 and 80+, i'd go for the fridge. if you have an option of keeping them in the 60's, methinks that would be better.

    Sucaba still on the shelf here in Portland OR @ $18. Confirmed Parabola will be here 3/21 also.

    That is crazy. Here in Illinois its gone within the hour of hitting the store.

    Is this a cellaring forum or a Parabola forum?

    At least you guys get Firestone in Chicago, luckily I have a trading bud in Cali that helps me out though. This supposed to drop 3/21?

    I just popped a 2011 Parabola I found in my cellar. Holy smokes this stuff is good!!! Still has plenty of bourbon and barrel flavors, and so incredibly smooth. Even my pregnant wife wanted some... Gonna have to find some more to lay down and forget about for a while.

    No 6 bottles only provided, all accounted for. Never hits the floor there.

    But this isn't a store issue, its a distributor/beer population demographic issue as the few stores they do get bottles only get 6 or less I believe.

    I just went to a local firestone tap takeover & tried parabola 1st time. fantastic. walked away with bottles of abacus, sucaba, XV, & XVI. firestone really has tons of awesome stuff. hope to visit there next time I'm out in cali. wish it was easier on the reg in ny for me to find though.
