First Attempt at a Hefeweizen

    Hey everyone,

    I wanted to get your opinion on a simple Hefeweizen recipe I'm looking at. This will be my first hefe and I am aiming to hit a more banana-y flavor as opposed to clove flavor.
    • 3lbs Muntons Wheat DME
    • 3lbs Briess Wheat LME
    • 1lb Briess Munich Malt 20L
    • 1oz Saaz @ 60 min
    • WPL300 yeast (will substitute Wyeast 3638 if my homebrew store doesn't have WPL300)
    Any suggestions/additions/subtractions? Would Hallertau be a better fit than Saaz?

    I've also considered dry hopping bananas. Any thoughts on that?
