I'm doing heaps of research and I'm probably just going to start with the kits just to get my feet wet. But I was wondering if you could mix different malting grains together? Like different ratios of different grain types?

If you want to see some various combinations, check out Northern Brewer's kits...each one provides a downloadable pdf with the recipe for that kit, and includes the grain combinations as well. You'll start to pick up very quickly on some of the grains that are used more often in various styles, and the percentage at which they are used. This will help you get an idea of how you can use various grains for whatever style you're shooting for.
