I'm doing heaps of research and I'm probably just going to start with the kits just to get my feet wet. But I was wondering if you could mix different malting grains together? Like different ratios of different grain types?

You'll start to pick up very quickly on some of the grains that are used more often in various styles, and the percentage at which they are used.
