First Lager

    Hello all, I've successfully brewed and kegs many ales but I just did my first lager. It's been in the keg, in the keezer, and on gas for a couple of weeks now. It's on 10 psi but it really isn't getting carbonated. I'm wondering if lagers (Czech Pils) need more pressure to carbonate properly? It's also taking longer to 'mature' than an ale but I expected that going in.

    Any advise on carbonation?

    What's the temperature of the beer?

    Nope. The CO2 level you'll get at equilibrium depends entirely on temperature and pressure, as shown on any of the dozens (hundreds?) of charts out there.

    Now, if you want your czech pils to be carbonated to a higher level (more volumes of CO2) than other beers you've carbonated at 10 psi and Temperature X, then yes, you'd need more pressure.

    I'll check the temp and let you know. Regardless I turned off the gas to my other three kegs and cranked it up to 15 psi to see what happens.

    What will happen is that it will over carbonate, unless the temperature is pretty high, or unless you happen to turn it back down just at the right time

    Time is another I'm use two 2 weeks at low gas to get decent carbonation. I also put the gas ON when the beer is cold as warm beer won't carbonate. Somewhere between 10-20

    Beer will carbonate when it's warm. But it takes more pressure.

    I have it set for 40 degrees F.

    What matters is the actual beer temperature in the keg, which (given enough time in the fridge) will be the same as the fridge's average temperature. Let's say the beer is at 40F. At that temp, and with 10 PSI, the CO2 will settle at 2.3 volumes when it's finished carbonating, which is a reasonable level for a czech pils.

    Turn it down to 35. It’ll carb much faster. I believe Bierstadt carbonates their lagers to 2.8. At 40* 15 PSI should get you there. Key is do you have the lines/faucet to handle it,
