    Any homebrew clubs near you? I'm guessing the folks at Bitters & Esters know, but you can find also out on the AHA website as well. Clubs are great to chat beer, ingredients, mistakes, equipment, etc…with some like minded folks.

    Bottles get delivered tomorrow. Going to take a gravity reading on Thursday, then take one on Saturday or Sunday when we bottle to be sure fermentation is done.

    Quick question though if anyone has a moment:

    When moving the fermenting bucket, obviously there will be a little disturbance. Do you let the bucket sit overnight in the place where you will be bottling to be sure all of the sludge is settled?

    Ideally, you don't want to have to move it at all. But if you have to, the longer it sits in one place before bottling, the better for avoiding trub/excessive yeast in your bottles.

    Unfortunately to let it ferment in a dark spot with little temp fluctuation it had to be moved. We are going to pull it out the night before and set it up on the counter where we will be transferring it to the bottling bucket the night before and let any disturbance settle for at least 12 hours. Hopefully that is enough time.

    It is all bottled.

    Final gravity matched exactly with the recipe.

    I drank the sample I pulled to test gravity. It was very good. It did cause a good amount of mouth watering.

    I used a calculator to fine tune the amount of priming sugar.

    Next time I will bottle in larger bottles though.

    Now two more weeks of waiting.

    Yeah, I think so.

    Haven't even tried it yet and we are doing another brew day on Sunday.
