First Recipe- Assistance Requested

    Alright, so this is the first recipe I'm ever attempting, so I imagine it is not where it should be. I would really appreciate anyone who can offer some guidance.

    I want to have a fairly light bodied and dry American IPA with a pungent and strong kick of Galaxy in the nose and flavor profile. Here is what I have so far:

    Brew Method: Extract
    Style Name: American IPA
    Boil Time: 60 min
    Batch Size: 5 gallons (fermentor volume)
    Boil Size: 4 gallons

    STATS:
    Original Gravity: 1.067
    Final Gravity: 1.019
    ABV (standard): 6.28%
    IBU (tinseth): 56.46
    SRM (morey): 9.17

    FERMENTABLES:
    3.15 lb - Liquid Malt Extract - Light (31%)
    6 lb - Liquid Malt Extract - Light - (late addition) (59.1%)

    STEEPING GRAINS:
    1 lb - United Kingdom - Carastan (30/37) (9.9%)

    HOPS:
    1 oz - Warrior, Type: Pellet, AA: 16, Use: First Wort, IBU: 43.83
    1 oz - Galaxy, Type: Pellet, AA: 14, Use: Boil for 5 min, IBU: 12.63
    2 oz - Galaxy, Type: Pellet, AA: 14, Use: Aroma for 0 min
    2 oz - Galaxy, Type: Pellet, AA: 14, Use: Dry Hop for 7 days

    YEAST:
    Fermentis / Safale - American Ale Yeast US-05
    Starter: No
    Form: Dry

    Recipe looks solid to me. Fermentation temperature could make or break it. Shoot for ~65 F or so and you should be OK.

    If you want it dry, I would drop some of the extract and add in some sugar. While I know that the 1019 FG is only predicted, it is extract and that FG is very common. 1019 is pretty high, and might come off a tad sweet.

    on an extract brew how exactly do you plan on first wort hopping?

    Boil more if possible using an extra pot to make sure you get your IBU's

    I would add 1 more oz of galaxy at ~15min

    Thanks for the feedback.

    I was looking into some methods for FWH with extract, but given my experience level and desire for this recipe to come out well, I think just adding the Warrior in at 60 minutes would be better. I decided to cut the Warrior back to .5 oz and add in .5 oz additions of Galaxy at 15 minutes and 10 minutes.

    Are there any guidelines for replacing extract with sugar (ratios, maximum amount of sugar as a % of fermentables, etc.)?

    Guidelines? Yeah, cut the Carastan in half, add < 6% table sugar, and move half your aroma Galaxies to ~10 min (my guidelines :slight_smile:) Cheers

    btw...FWH works just fine with extract...&...nice first recipe

    edit: not the conventional wisdom here, but I might reverse the times on the LME additions

    You could go with half a pound of carastan. You could add a little sugar in place of the carastan, especially if you like them slightly dryer. But - as is your recipe would also be fine. Oh, the changes you mentioned would be fine too, probably even better, do that. Beer is pretty forgiving as long as you stick with the KISS method, which you have. And most simple recipes aren't something that has a super low tolerance for deviation... they have some flexibility. Do it and brew it!

    You are doing a full boil, right? If not, split between two pots (split hops proportionally) and do a full boil. Make sure beer below 70F (below 65 better) when you pitch yeast. Ferment below 70F. Sanitize well.

    0.5 lb - United Kingdom - Carastan (30/37) (6.4%)

    HOPS:
    0.5 oz - Warrior, Type: Pellet, AA: 16, Use: Boil for 60 min, IBU: 31.52
    0.5 oz - Galaxy, Type: Pellet, AA: 14, Use: Boil for 15 min, IBU: 13.69
    0.5 oz - Galaxy, Type: Pellet, AA: 14, Use: Boil for 10 min, IBU: 10

    1 oz - Galaxy, Type: Pellet, AA: 14, Use: Boil for 5 min, IBU: 11
    1 oz - Galaxy, Type: Pellet, AA: 14, Use: Aroma for 0 min
    2 oz - Galaxy, Type: Pellet, AA: 14, Use: Dry Hop for 7 days

    recipe looks great!

    What yeast are you using?

    If you can keep the ambient temps ~60F I would suggest using 1968, otherwise chico would be good
