First time brewing, question about directions

    For my first brew, I will be using a Brewer's Best chocolate milk stout extract kit. The directions say to transfer into secondary fermenter after 5 days, and then add the cacao nibs. However, I'm not going to do a secondary. Should I just ignore the transfer to secondary, and add the cacao nibs after 5 days? Also, is the date printed on the LME bottle the manufactured date, or expiration date?

    If you're not going to do a secondary, which I would recommend for a chocolate milk stout, then go right ahead. It's beer, it's easy! No worries. That yeast will drop to a sediment on the bottom and you just rack off of the top of that.

    As to the malt extract I have no idea but I'll give you two thoughts, the first of which has been poo-poo'd here before. #1, if it's liquid malt extract it's already damaged, oxidized product and so it really doesn't matter too much. Fresh would be better, but what can you do. (Many will say "I use liquid malt extract and I've never had an oxidized beer" - oh yeah, you have, you just don't know it yet). #2, if it's dried malt extract it'll have less of that (I don't know why, just experience). I wouldn't worry about it, but again, fresh would be better. No sense in worrying about it, you're only going to get an "extract" beer out of it regardless so go right ahead.

    If later on you feel you've still got the bug consider working up to a full grain system and you'll have fresher beer and a lot more fun / a lot more headache !!! :stuck_out_tongue::flushed::grin::rofl:

    Thanks for the response. I actually plan on doing BIAB after this first batch, so I bought a 10 gallon pot to give me that option
