I usually visit Waffle Factory, which is on Rue du Lombard and nearly caddy corner from Nuetnigenough, which is a great beer/food spot. Anywhere along Rue de l'Etuve, which is right off of Grand Place, has cheap waffles with anything you want on them.

Wait a sec, 1 euro for waffles? I had come to the understanding that the standard freight for the waffle had gone up to 2 around the center. I have 1-2 street waffles a year and hadn't noticed the deflationary waffle trend. I think I paid 2 euros from a van on a Brussels street a month ago. This is unquestionably good news. If you want real Belgian street cred, just get the waffle, nothing on it, a handy snack.

I first, second, and third Cafe Rose Red. When we were there Beertje was closed and the bartender upstairs where we were sitting at De Garre was a complete ass (basically yelled at me because I had the gall to ask for a beer when he had a chance). So back to Cafe Rose Red it was. The guy we talked to (who I think was the owner?) was completely awesome, and had a lot of great beers to drink. Even after going to Cantillion and Moderer Lambic in Brussels and In De Wildeman and Cafe Gollem in Amsterdam, Cafe Rose Red still had stuff we hadn't seen elsewhere.

What month is best to visit Belgium? I did July and hit was rather warm... was thinking of booking a fall/winter trip but not sure if beer options would be different.

Hard to tell. We can have a nice stretch of weeks in March or April, but you can't count on it. The same for May through September, maybe even, October. And the occasionally crisp winter day. But the sad reality is that the "can't count on it" it is way more prevalent than the "nice." My weather app basically just shows a gray sky with the caption, "100% chance you're living in Belgium." ... For your best best, I'd say April through mid-July, when things clear out for summer vacations around the time of the July 21 national day, and September-October. Pack a sweater and raincoat.
