Ok so i got a Brewers Best IPA kit and brewed it back in April! I have been slacking and decided today to bottle it! The problem I am having is that it tastes like apple cider! Is it ruined? I read some stuff that says to let it age (In the bottle?) and it should remove this flavor. Is this True? What do I do?
Is it sour/tart? Sounds like some suspect sanitation. Putting it in bottles isn't going to take the flavor away, but it's been on the yeast for a while, so I wouldn't suspect that it would help clean it up any further.
What was your fermentation temp.?Did you let this batch rest in a warm environment for a long time?.If this is the case you could try to lager it for 2-3 months to see if its flavor gets better , otherwise it could be due to acetobacter infection(I hope this is not the case).
I wouldn't say its sour maybe a little tart the first impression i got from smelling and tasting it was apple cider. it was in my basement maybe 55-65 degrees. What does it mean to lager it? I was drinking some yesterday un-carbonated its not bad just a little off with the cider taste .
cider taste means it you had some fermentation issues, too warm, too much sugar added to the boil, or an infection possibly. Lager it is to cold crash it for extended period of time in your case. Let it sit cold at around 35-40 degrees for a month or so and see how it taste. Chances are, the cider flavor isn't going away.
I'm with Fatcity, sounds like high fermentation temps to me, I don't think the cider flavor will go away. Did the kit have liquid malt? Possibly old malt as well. Was the kit sitting somewhere hot since April?
If you like the taste enough that you will drink (at least most of) the whole batch, then bottle it. If not, see HerbMeowing photo above. It may still clean up some with time.
