So, I got impatient and did a quick-carb at 20psi on my last keg and overshot things. I've had the pressure back down at 11psi for nearly a week, but I'm still pouring glasses that are half foam. Is there some trick to getting some of the CO2 to come back out of solution? (And, yes, my beer lines are properly balanced for 10-12psi. Normally I have no problem dispensing at this temp and pressure.)
At 11psi, it will come down eventually, particularly if you continue to serve it. I'd suggest burping the keg every now and then (release the pressure using the pressure release valve).
I over carb about once a year. If you can stand it, turn off the gas supply and burp the keg a couple of times a day for a day or two. This will revmove the excess gas from the head space. The headspace will refill as co2 gets released from the over carbbed beer. Turn the gas back on at normal serving pressure and try a beer or two. If still over carbbed, repeat the above. If under carbbed, leave it alone for a couple of days.
No need to wait a day or two. You can de-gas it fairly quickly by pulling the pressure relief pin, shake the keg, repeat. Do this a few times maybe.
