flaked wheat

    If I just wanted to add some head retention and haze to my beer without the time of a mini mash (extract beer) could I just add some flaked wheat to the boil without consequence? What would happen?

    I have added straight up Oatmeal to the boil on a Wit before, turned out well. Got the idea from @OldSock who did it in a stout. It will impact head retention and haze. You will have un-converted starches in the beer, so be diligent in sanitation, any bacteria or Brett get in that batch they will chomp away at the starches. Also, increase your boil size as you will lose a bit of wort to absorption.

    Randy Mosher suggests adding a tablespoon of flour to the boil, that works too.

    I guess there is a concern about microbes fermenting the starch, but there are even easier-to-ferment dextrins in every beer anyway, so I doubt the starch adds too much risk.
