Flanders Red with ECY01 Bug Farm?

    I have some East Coast Yeast 01 "Bug farm". Do you think it wil be ok to use this yeast in a Flanders Red recipe and throw it in a barrel for 6 months?
    I never made a Flanders Red and Never used ECY01 so not sure if they go together.

    So I brewed this on Friday and it is Sunday night and still no signs of fermentation. It is at 70 degrees now. Too soon to worry?

    I am not familiar with "bug farm" specifically, but patience is always a virtue, and even more so with the agents for sour beers. I was initially thinking 6 months might not be long enough. You might to taste it then, but plan to go longer if necessary.

    I'll probably wait a year but I'm just concerned how long to wait for any sign in initial fermentation.

    Used the latest batch of ECY01 (bugfarm vi?). Took five days for 3 little, fuzzy, white/blue mold chunks to appear and 2 days after that a krausen started to form. That lasted a week and has pulled back. No signs of a pellicle yet.
