Flat beer...Should I have known?

    I just finished pouring two cases of bottled pumpkin stout into a keg to force carbonate, so there should be a happy ending.

    I bottled this stout 3 weeks ago, using the same honey I normally do, prepared the same way (150 ml drizzled into 350ml of just-boiled water). This honey was successfully used on two other batches. Anyway, zero carbonation after 3 weeks. No sediment in the bottles, nada.

    The regular fermentation was ok. The recipe called for adding 8 oz of bourbon, which was added during secondary. OG=1.080, FG = 1.037. Flavor is terrific. It looks like the yeast (Wyeast 1056, harvested from another batch, made starter) just went out to lunch.

    Is the inactivity in the bottles something a wiser brewer could have seen coming?

    I don't know your recipe, but 1.037 seems quite high for 1056...unless you've got A LOT of crystal.

    So, yes, I think that FG should have told you things weren't quite right.

    It seems yeast couldn“t end primary fermentation(FG 1037 is too high ) , maybe there might be a yeast health problem.
