Floor-Malted Bohemian Dark Malt

    Anyone used this? Successes? Problems?

    I am thinking of brewing a Czech dark/black beer in the style of U Fleku and am wondering how much of this new product from Weyermann to use. The W'mann Web site says up to 100% is possible. My buddy and I brew on a 30 gal. system and do boil volumes of 40 gal. We like to buy, and use, the unopened 55# bags to ensure freshness, so if using 100% will work successfully, we may go that route. Probably Saaz hops and (perhaps) Urquell yeast.

    Any and all input/suggestions welcome.

    There is an article published on the AHA website on brewing U Fleku Tmavé. The article starts off:

    “When my friend Thomas Kraus-Weyermann and I both received invitations from Ivan Chramosil, brewmaster of the brewery and restaurant Pivovar a Restaurace U Fleků in the Czech capital of Prague, we did not hesitate to accept. After all, U Fleků—founded in 1499—is the world’s oldest brewpub. Who would not get excited at the prospect of brewing there?”

    At the end of the article they provide a recipe for U Fleka Tmavé. Below is the grain bill for a 1 barrel batch:

    “Mash
    21.68 lbs. (9.83 kg) Weyermann® Floor-Malted Bohemian Pilsner Malt @ 1.8 °L (50%)
    13.01 lbs. (5.96 kg) Weyermann® Munich I @ 6 °L (30%)
    6.5 lbs. (2.95 kg) Weyermann® CaraMunich® II @ 45.5 °L (15%)
    2.17 lbs. (0.98 kg) Weyermann® Carafa® II @ 45.5 °L (5%)
    Total grain bill: 43.36 lbs (19.67 kg)”

    From the specs I found (moisture, protein, extract FG min) it doesn't appear much different than the lighter colored floor malted Bohemian Pilsner Malt so I don't see why it wouldn't work at 100%.

    Do you have the hopping rates for this recipe, Jack ? I have a lb of Czech Saaz burning a hole in my freezer, and I was thinking of doing something along these lines...

    Reviving this thread. Anybody out there use this yet? Thinking about using 100% myself

    Accidentally ended up with a sack of it instead of Bohemian Pilsner. Specs look pretty close to Munich. Might use it as as sub for it in the U Fleku recipe above (which I'd been planning to brew anyway). @BuckettOfBeer, did you end up trying it 100%?
