Florida Weisse

    Anyone know how JWB gets all the strong fruit flavor? I want to make a Orange Dreamsicle clone. The base I'm fine with.
    For the Orange should I use zest, tincture of zest, whole fruit, zest with some juice?
    This is going to be carbbed and killed st a party so nothing long term. The base is almost ready.

    There was an article in zymurgy a couple years ago about making a Florida weisse with fresh kumquats. May be worth looking up.

    FWIW I made a great raspberry berliner using 0.75 lbs per gallon frozen. Had a great balance.

    Just use a ton of fruit, try 3 lb/gal.

    My raspberry blonde used 6lbs frozen raspberries for 5.5 gallons of beer, and that beer was overwhelming in the raspberry flavor. Two years after bottling it was still very fruit forward.

    Was that fruit put into primary? I'm pretty sure that's how JWB does it.

    I'm looking into this too and wouldn't mind hearing some thoughts from people who may have attempted a similar recipe. I was simply going to add (previously pureed and frozen) fruit in secondary? (thinking a blend of some "tropical" fruits: mango, kiwi?, guava (if i can find some) etc.) figured that would give it a better shot at intense fruit flavors. I was also going to shoot for 3lbs / gallon but based on the some of the earlier comments I'm now thinking that may be crazy or that this will restart fermentation and i'll end up with too thin of a finished product. Would love any input, THANKS!

    for the 3 gallons I want to reproduce something like Orange Dreamscicle I made a tincture of the zest of 8 Cara Cara oranges and 2 vanilla beans. I bought a commercial berliner to test with. This alone seems to do the trick. I may slice up some oranges in the secondary to add a bit of freshness

    Yesterday I strained my tincture and recovered a bit over 1 cup of liquid. I added 0.25 cups to the 3 gallons and it seems to be a perfect amount. I am going to let it sit for a few days and see if I need to add a bit more. The other 3 gallons got a shit ton of tropical fruit. I'm hoping to keg both of these in a around three weeks.

    id be particularly interested to know if you ended up adding oranges to secondary as you mentioned. I just put my "tropical" florida / berliner weisse on fruit in secondary and its fermenting the fruit like crazy, ive heard concerning things about fermented orange / orange juice - id like to try and make an orange creamsicle type berliner in the future as well
