Founders Doom Aging

    So I was able to score 6 bottles of Doom today. I definitely plan on drinking one tomorrow night when its nice and cold. Since this is 10% ABV, I assume this can be cellared for up to a couple years, yes? This whole barrel-aged IPA thing has gotten me all screwed up.

    I'll age one for ya :-D no way I'll be able to find a bottle in my area, probably a few dozen cases to go around. I think it'd age nicely, I age Double Crooked Tree which is technically an Imperial IPA and it goes all Barley Wine with age and then just mellows incredibly well with more.

    Sounds like it tastes much better as it warms, so I may drink the first 1/2 cold and polish it off as it warms up

    I'm drinking it right now. Not much going on other than hops and barrel. Get rid of the hops and mellow out the bourbon and you're not left with much.

    But since you're humblebragging six, what do you have to lose by laying one down?

    I purchased 3 and decided to drink my first ever right away and cellar the remaining 2. I'm new to this storing of beer for later use, so I'm not sure how long I'll keep them aging. I want the hops to remain, so maybe a few months tops?

    I'm aging one of mine for about a year, I think it's got the malt backbone to turn into something amazing down the road, always worth the experiment

    He wasn't hating, I don't believe. And if you were sorry, you wouldn't have done it in the first place.

    But on topic, I don't know what aging would do to improve this beer. Maybe age one, but hops fade quickly and bourbon flavors tend to fade as well. So, in two years...you're left without much.

    I am going to try one fresh and then one this summer. Im sure it will be good both ways

    Still surprised people are considering this.. It's like people asking about aging Hopslam. If you got em I guess put one away for six months if you're that curious but as others have noted hops and some barrel are all thats really in there

    Would you age Double Trouble? If yes, aging Doom is a valid question. If no, then why the hell would you age Doom?

    After drinking one the other night I have a feeling that some age on this would do it good. I compare it to Backwoods Bastard fresh in that I think the Barrel will mellow out a bit and the beer will become really complex. It's delicious right now but definitely a barrel bomb.

    From my experience aging some other sweet hoppy beers (i.e. Hopslam, Burton Baton), there is a bit of a bell curve. Drink it fresh and get a nice hop/sweet balance, wait 3-4 months and the beer gets a little out of sync. 8-10 months and the hops fall off and you are left with a very nice balanced barleywine which I am very much in to.

    Very interesting to hear about people who age DIPAs because they turn into barleywines. This is purely out of curiosity and scientific inquiry, but what reasons do you have for not just buying fresh barleywines instead?

    That little kiss of hop and its interplay with the barrel makes this beer for me...I think it would bore me a bit without the hop presence...so I look forward to sharing my second bottle real soon.
