French Saison 3711

    I have a Saison finishing up, i used 3711 and was thinking about racking on the yeast cake on my next brewday. This would be my first time doing this and i was trying to come up with a beer to brew. I would rather not brew another Saison and the other styles listed on Wyeast site for 3711 aren't turning me on right now. Is there something else this yeast would work for or is it not a good idea to venture outside the "box"?

    Wheat or wit (Imperial?), possibly rack onto fruit purée...?

    Saison yeast=Saison.

    You could go dark and imperial, a 9% deep brown saison would be delicious.

    80% Pils
    15% Munich
    5% Caramunich III

    Low mash temp, long boil.

    German Magnum to 35 IBUs, a dash of Styrian Goldings to finish.

    Belgian IPA? Definitely won't have to worry about too much crystal malt with that yeast!

    That sounds good. I've never brewed one before, can you point me in the right direction as far as grain bill and hop schedule?

    Brew your favorite IPA recipe and put it on top of the yeast cake. Keep the IBUs on the low end for the style, though, the dryness from the saison yeast will enhance the perceived bitterness.
