Fresh Hop Advice

    I received around 6-8 oz of fresh cascade hops from a friend. I plan on adding to my next batch, but that is 3 weeks away, having just brewed a batch recently.

    I plan on adding as a late addition to the boil, likely a Maris otter based pale or bitter recipe.

    Can I store them in the fridge and use them wet, or is 3 weeks too long to store wet and thus should dry them?

    Brew now. What's the point of taking wet hops and drying them just to brew later?

    Wet hops in the fridge for three weeks is inviting mold.

    Six to eight ounces t'ain't all that much.
    Spread'em out on the dining room table to dry and use later.

    Has anyone frozen wet hops before?

    For a short time (2-5 days). Beers turned out well. No weird flavors.

    I have wondered about flash freezing and how well that would work. That's what they do with berries around here.
