Fruit Extract Advice Needed

    What experience do any of y'all have with fruit extracts? I brewed a Falconer's Flight kit. It's one of my favorites and I've brewed it several times. I added dried orange and tangerine peel to it. After trying Heavy Seas' Tropicannon, I wanted to try and mimic that to have a somewhat fruity beer without the sweetness of a shandy. Tropicannon's label says it uses grapefruit, blood orange and mango. I have grapefruit and mango extract. Instructions state 4oz is good for 5 gallons. I've read that flavor can intensify during aging. I was thinking of adding 2oz of each extract the day before bottling, tasting it and possibly adding more before bottling. Any advice or thoughts would be appreciated.

    I'm currently working with a Strawberry beer, and have already added 8 fluid ounces of Brewer's Best Natural Strawberry Flavouring (to 5 gallons). I'm thinking of adding another 2-4 ounces, as the flavour is not strong enough yet (I'm trying to approach the intensity of Fruli). I think it depends on the type of flavouring/extract. Some fruits/flavours such as strawberries take a lot, while others may not. I have used peanut butter flavouring and only needed 6 fluid ounces to arrive at a strong flavour. I think that the best approach is to first add about 4 ounces, and then add about 2 more ounces at a time, and do a taste test.

    I am using Brewer's Best for both grapefruit and mango. Do you know if the flavor (sorry, for my spelling, I'm American) intensifies over time?

    I've used coconut extract in a brown ale before. I had about 20 gallons. In the 1st 5gal I think we added 20ml. It was overpoweringly coconutty. In the 2nd and 3rd 5 gallons, I opted to add it in each bottle, one and two drops respectively. Both of those were great-- 2 drops was best. The last bit I just bottled as a normal brown ale.

    My advice would be to add the extract in the bottle, or in such a way that you can regulate the intensity.

    Do you use 12oz bottles or bombers? I only do bombers now because it's less work and, frankly, I'm always going to have at least 2.

    12oz. Maybe 3 or 4 drops would be better for your format, but the important take away from my post is that it's good to regulate the dosage and test before flavoring an entire batch with untested extract.

    Yes, Americans and Canadians spell some words differently, but we're used to both. I've only had experience with the Peanut Butter flavor so far, and I didn't really notice much change over time. If anything it might be accentuated a little because the hops do mellow over time.
