fruit lambics question...

    I have a 2012 fou foune, and 2 2010 schaerbeekse krieks. How long before these beers lose their fruit character? I plan on drinking the fou foune next month (I like apricots), but I see people cellaring these beers for 5 to 6 years. Is it assumed that as they lose the fruit character they become more tart? Cheers!

    The fou foune should be treated like an IPA, it falls off quickly. At a year old you might as well let it ride. Krieks are much less susceptible to fading, so you will have to experiment to find how much tart:cherry you prefer. (tarts up with age, fruit fades with age)
