Funkwerks - Saison d'Brett

    So they just released (only in their taproom) bottles of a new pilot brew, Saison d'Brett. They say its an updated variation of Brett Dream. I never tried Brett Dream but based on the reviews it doesn't appear it was a huge success, so hopefully this one is better. Regardless, I will heading to the taproom later today to grab a bottle. I am sure no one yet has sampled this beer (it being brand new and all) but I would interested to hear how it compares to Brett Dream once some of you get around to checking this out.

    Any idea if the bottles will hit distribution or tap room only?

    I saw this update too and didn't see Funkwerks specify.

    Brett dream was actually pretty damned tasty... except it was over carbed. I popped my last one about a month ago, tons of the brett c pineapple and citrus flavors, just enough funk to make me happy, but I probably got 3/4 of a bottle of foam.

    I had a Brett Dream last month hoping it would develop nicely in the bottle, and I didn't like the result. It was hyper dry - not in a pleasing way - and was all bitterness and mineral flavor. I liked it fresh, though.

    Grabbed a bottle of this earlier....looking forward to trying it.

    Noticed it lists a 0 year cellar limit...thought with the brett it should be an ideal beer for aging. I don't cellar shit, so it doesn't matter to me, but has me curious.

    Also, on the topic of Funkwerks releases, their upcoming Spring release is going to be their Bastogne under a new name, Solenna. I have grown to really, really, really like that beer. Initially, I was only lukewarm towards it but have had it a ton the past month or two when at different bars and its totally grown on me. Can't wait for the bottles, personally. Will be interesting to see if I am just an oddball for how much I have grown to like it or if its really a good beer.

    I think they slap '0 year' on all the pilot btces, haven't seen one without it. I'll probably hold on to one to see how it turns out.

    I agree about the Bastogne, at first it was just a solid beer.But lately I've really been enjoying it. I've got a bottle or two of that first batch they were selling in the tap room. Will be interesting to see how it compares to Solenna when it is released.

    Tried it yesterday and got to say, not feeling it at all. Perhaps it was me and I was having an off night, but to me that brett was not working. The finish to the thing is what really threw me off.

    Perhaps the brett just needs time to settle in? Not sure exactly how that works...

    Not to geek out on brett, but the brett will eat all the sugars and a lot of the other biproducts that the usual sacc yeasts either can't eat or leave behind. Honestly, I was pretty excited to hear about this beer, but after drinking a few CS saison vaillie artisnal's I'm pretty sure I will not be impressed. Crooked Stave has me spoiled, Chad is amazing with brett.
    Edit: the brett that is leftover in the bottle wil change the dynamic of the beer a lot, especially over time. If the brett was added after the primary fermentation was done the brett could take years to clean up after. The sacc, however if the beer was fermented solely with brett it will ferment out almost as fast as sacc. Soooooo if you age these beers in the bottle, depending on the yeast used for primary fermentations along with the strain of brett used, you may have a beer that will change in some way over time.
    And that's a brief amateur version of brett fermentations.

    The CS saisons are significantly better than this one; I'd have to say the brett in those seemed to be used with much more finesse and there was never a point where I found it took over the beer like it seemed to in this one did in the finish. Same can be said with other great brett using saisons like (GI's) Sofie and (Boulevard's) Saison Brett.

    I hope Funkwerks continues dabbling with brett and saisons, and I will continue to support their efforts along the way. If they can figure it out that would be awesome. Their Bastogne/Solenna utilizes brett and I think it works great in that one, though that isn't a saison. Not sure why they can get it to work in one style but not the other, but that they have had some success with it does seem to give me hope that in time they too will be able to pull a brett infused saison off.

    Slightly off topic, but since Crooked Stave has already come up I will go with it, enjoying a Saison Vielle right now and its coming along super nicely....seems to have started to develop some sweetness to it that I am very much appreciating. Maybe its always been there but I have had it a few times now and yet to notice it.

    I can't get enough of that beer. So nice, the brett is starting to. Throw mango, and pineapple along with the lemon and pepper. So nice.
    As for brett saison, I think its hard to balance simply because the saison is delicate and dry, so any off flavors that come through from either yeast can easily be picked up on the palate. You can hide a little bit of vomit or cheese with a good dosing of hops, like tank 7, but its hard to hide in something as subtle as a saison.

    Well, screw it. Crooked Stave's Old Saison if fricking awesome. I like it better than Surette myself. The sourness level is just perfect for me, and the oak flavor is awesome, too. I love that beer. Need to get me some more.

    I am assuming you are referring to Saison Vielle? If so, I completely agree. I think it is significantly better than any of the Surette variations, personally.

    I thought Saison Vielle was really mediocre on draft when it was fresh, but maybe it's aged nicely since then, because I've heard a lot of great things about it recently.

    Has anyone else here been into the Crooked Stave tap room to have the new version of the Saison? He renamed it and dry-hopped it with Citra. Yes, it's every bit as good as it sounds. I'ma buy the shit outta that beer.

    I liked it when I first tried it (fresh) but I didn't find it to be anything special and, initially never thought it wold be something worth going back for seconds for. Then I did go back for seconds and I liked it even more, then went back for thirds and liked it even more, etc, etc. Seems like I enjoy it more each time I try it and the brett is definitely starting to come along in this one, as SFACRKnight mentions.
